Pumpkin Butter

  • 1 can (29 oz) pumpkin puree
  • 1 cup brown sugar
  • ¾ cup apple juice
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. ground nutmeg
  • ⅛ tsp. allspice
  • juice of ½ a lemon
  1. Combine all ingredients, except for lemon juice, in a large saucepan.
  2. Bring mixture to a boil.
  3. Reduce heat to low and simmer for 30 min, stirring occasionally.
  4. Remove from heat, stir in lemon juice and let cool.
  5. Pour into airtight jar(s) and store in refrigerator.

Sweet Hawaiian Crockpot Chicken Bites

As many chicken tenderloins as you like, cut into chunks

1 cup pineapple juice

1/2 cup brown sugar

1/3 cup soy sauce

Put everything into the crock pot and cook on low for 8 hours. Can serve over rice if you like.

Chocolate chip cookie bars

1 Box yellow cake mix
1 Small box instant vanilla pudding
1/4 Cup water
3/4 Cup vegetable oil
2 Eggs
1 Cup chocolate chips. I used semi sweet chocolate chips.

Preheat your oven to 350 degrees.

Combine cake mix, pudding, water, vegetable oil, eggs and chips in large bowl.

Pour the batter (it’s going to be thick) into a greased 10×13 baking dish. I sprayed my dish with nonstick cooking spray which worked well.

Bake your bars for 20-30 minutes (I took mine out at 25.)

Test the middle with a toothpick to make sure its done.

Slow Cooker sweet pork tenderloin

1 Pork Tenderloin

1 1/3 cup brown sugar

3 T olive oil

1 tsp cinnamon

1 T mustard powder

2 T garlic powder

1/3 c of water
 

Mix all your ingredients together in a bowl.

In your crock pot pour down olive oil all over 
the base of your slow cooker. Put in your tenderloin. Pour in your ingredient mix over the tenderloin

Cook on high for 3 1/2- 4 hours
 
If you want you could serve on sesame rolls 🙂

Skillet Beefy Mac

1 pound ground beef, or ground turkey
1 medium onion, chopped
1 can (10 3/4 ounces)  Condensed Cream of Celery Soup
1/4 cup ketchup
1 tablespoon Worcestershire sauce
2 cups corkscrew-shaped pasta (rotini), cooked and drained

Cook the beef and onion in a large skillet until beef is browned, drain any fat. Stir in the remaining ingredients, make sure you cooked your noodles at directed on the box, heat through while mixing. Season with salt and pepper. Serve with mashed potatoes, you could also serve this on top of mashed potatoes.

Twist on Beef Stew

1  pound ground beef, i used ground turkey
1 large onion, chopped
1/2 teaspoon garlic powder or 2 cloves garlic, minced
1 can (10 3/4 ounces)  Condensed Tomato Soup
1 can (10 1/2 ounces)  Beef Broth
1 cup water
2 tablespoons chili powder
3 medium potatoes, cut into cubes (about 3 cups)
1 can (about 16 ounces) whole kernel corn, drained
Shredded Cheddar cheese

First brown the meat in a skillet, season and add garlic. Cook until no longer pink. Drain only is using ground beef. I put about 1/2 cup beef broth into the meat while it cooked. Add everything to the slow cooker (not the cheese). Mix well. Cook on low for 6-7 hours. Serve in large bowls, sprinkle cheese on top. Serve with corn bread.

Chicken Avacado Feta Salad

Ice burg lettuce, as much as you like

Spinach, as much as you like

1 can of corn, drained

1-2 avocados, sliced

Crumbled feta, as much as you like

Grilled sliced chicken, i used chicken breast, sliced and grilled

Olive oil and Vinegar Dressing

Place cut up lettuce and spinach in a large bowl. Arrange salad as you like. This is fabulous!! I served with homemade whole grain bread.

Cheddar Bacon Dip-Crack

16 oz sour cream
1 packet Ranch dressing mix
3 oz bacon bits (in the bag not jar)
1 cup shredded cheddar cheese

Mix together and refrigerate 24 hours. Serve with chips and/or veggies.

Italian Chicken Sausage KaBobs

Pkg Italian Chicken Sausage, cut into chunks

1 red pepper, cut into chunks

1 green pepper, cut into chunks

1 yellow pepper, cut into chunks

Place all ingredients into a large bowl and season with salt, pepper, italian seasonings and tonys creole seasoning. Arrange on sticks and cook on the grill. Serve with grilled corn on the cob. You can also add chunks of red potatoes if you like.

Baked Cod

Cod Fillets

4tsp butter

lemon slices

salt and pepper

Heat oven to 400 degrees. Rinse fillets off under water, pat dry with a paper towel. Place fillets into a deep baking dish, season with salt and pepper, put butter sliced on top and top with lemon slices. Bake for 55 minutes.
